Chef Vikram Vadke grew up in India; a place known for their unique spices and where agriculture is a major sector and source of income. In India, street food vendors are getting increasingly popular, especially in major outdoor catered events. According to Chef Vikram Vadke, spices used in the right quantity make food a lot tastier. This has influenced his style as cooking, as he tends to keep his cuisine spiced up with a wide variety of spices.

Vadke has travelled and worked across India, the United Kingdom, and the United States before finally settling down in Canada for education, work, and leisure.

His culinary career began when he worked for a French bistro in the United Kingdom where he learnt that education was just part of his career. However, to be a well-rounded chef, he knew that continuous learning and experimentation with food was another critical part of the industry.

With this in mind, he travelled to the United States to work with the Disney Cruise Lines and Carnival Cruise Lines. With this experience, he was able to polish his skills on bulk production cooking while cooking dinners for 3,000 guests on the cruise ships.

Chef Vikram Vadke welcomes students, staff, and faculty members to try out a few Indian dishes during Global Awareness Week where he'll be spicing things up with Indian food.

Please join Chef Vikram Vadke for "Learn-To-Cook: Indian Food" where he will guide his guests through making two authentic Indian dishes: Paani Poori (a crispy ball stuffed with potato, pea and filled with spiced broth) and Kanda Bhaji (onion croquette with sweet tamarind sauce). He will take guests through each step, explain the differences between various Indian spices, and talk about key ingredients used in his dishes. At the end of the session, attendees will get to taste a small sample of the dishes created and bring home a recipe card to make the dishes at home.
