'Ration' is a pop-up restaurant initiative made up of 3 young chefs in Edmonton. It is lead by Mithalee Rawat - head chef of Pangaea Market's organic delicatessen/cafe and a NAIT Culinary Arts graduate. Her passion for contemporary cuisine as well as environmental sustainability inspired her to start Ration. She approached her friend, Matthew Helstein, who is the Sous Chef at Cibo and also NAIT Culinary Arts alumni. They have cooked together previously for many a volunteer non-profit event. Sheldon Polowick is the third member of Ration. Also a NAIT Grad, Sheldon is a Red Seal Chef and currently part of the Canteen kitchen crew.

Ration invites you to an elegant, seasonal, organic 5 course dinner featuring ingredients grown in and around the uniquely wonderful city of Edmonton. We made a conscious choice to create an organic vegetarian menu so as to highlight the abundance in our region during this time of year. We want to display that creating a fine meal without the use of meat or heavily processed foods is not only possible, but yields higher quality food.

We emphasise our ethics - organic, local, made-from-scratch - because they are important. We believe that delicious food and sustainability need not be exclusive. We believe in high standards.

Drink pairings are presented on a separate menu at an additional cost. All proceeds from drink sales will be donated to Survival International - the only organization working for tribal peoples rights worldwide.
